Weight Watchers Lasagna

Lasagna doesn’t have to be off limits with Weight Watchers!



  1. Cook lasagna noodles to just soft and set aside.
  2. While noodles are cooking, heat ground turkey/beef with 1 tsp olive oil, pepper, and parsley in a large skillet over medium-high heat for 8-10 minutes.
  3. Add in diced tomatoes and tomato sauce, stir well, and cook another 5 minutes.
  4. Spray the bottom of your pan with nonstick, and lay out a layer of lasagna noodles.
  5. Add on a thin layer of your meat mixture.
  6. Add one zucchini on top for every “serving” you have.
  7. Follow with a layer of ricotta (use all your ricotta for this layer).
  8. Sprinkle mozzarella over it, along with fresh basil.
  9. Repeat steps 4-6 (lasagna noodles, meat, zucchini)
  10. Add a final layer of mozzarella.
  11. Bake at 400 degrees for 20-25 minutes or until top is brown and bubbly.
  12. Cut into squares and serve with an extra basil leaf on top.
