Instant Pot Chicken Taco Soup is a hearty 1 pot meal, great for year-round dinner and lunches. ZERO points on the WeightWatchers Freestyle plan, and freezes well! Perfect for the beginner Instant Pot user or the seasoned chef that just wants an easy and delicious meal!

This Instant Pot Chicken Taco Soup is perfect for making year round and freezes great! Perfect for families too considering sometimes kids are really picky eaters! We literally make this every week and I always have a frozen batch just in case I want some in a pinch!

Instant Pot Chicken Taco Soup


Ingredients for Instant Pot Chicken Taco Soup
Onion – you can use whatever variety is your favorite
Black beans and Kidney beans – we always get the seasoned kind, just be sure you drain them
Tomato sauce – for a cleaner option you can opt for organic
Frozen corn – if you don't have frozen corn you can used canned as well
Diced tomatoes with green chilis – aka Rotel! If for some reason they are out of Rotel, simply grab 2 cans of diced tomatoes and 1 small can of green chiles
Taco seasoning – you can use store-bought, but I always use my homemade taco seasoning, plus it is salt-free and I know there are no additives in it!
Spices – Even though cumin and chili powder is in the taco seasoning, adding a little extra just gives it more flavor!
Chicken – we use boneless, skinless breast, but you could also substitute tenders or thighs
Water – you could actually use a chicken or veggie broth as a swap


How to Make Instant Pot Chicken Taco Soup
- Place all ingredients in your Instant Pot.
- Make sure seal is in lid properly, apply lid, set vent to sealing.
- Set instant pot to soup (or you can use manual) with high pressure for 8 minutes.
- Allow to natural pressure release by not touching the vent for 10 minutes.
- Shred chicken breast with two forks and place back in pot.
- Serve and enjoy.
Can I Use Frozen Chicken?
Yes! Simply increase the cooking time to 10-12 minutes and follow the rest of the instructions in the recipe card. Depending on the size of your chicken breasts, you could probably get away with a little less time. Just to be sure, also check that the internal temperature is 165 degrees F.

Can I Make Chicken Taco Soup in the Crockpot?
Yes! Combine all ingredients as instructed above. Set crockpot/slow cooker on low for 6 hours or HIGH for 3 hours.
If you decide to make this in a slow cooker, I highly recommend some crock pot liners! They are liners that go inside of the slow and make cleaning up a breeze!


Tips for Making Instant Pot Chicken Taco Soup
- If you forgot your taco seasoning or need a SALT FREE version, grab that here!
- For garnishes, you can top with cheese, sour cream, or tortilla crunchies
- Here's a little hack for shredding chicken; use a hand mixer! It will shred in a matter of seconds!
How To Freeze
After your taco soup has cooled completely, simply pour into a freezer bag or you can use a vacuum sealer. Rather than storing in one portion, you can ration the soup out and it makes it easier when you are reheating for one or taking it for lunch.

Zero Point Chicken Taco Soup
Equipment
Ingredients
- 1 small onion chopped
- 1 15.5 oz can seasoned black beans drained
- 1 15.5 oz can light kidney beans drained
- 1 8 oz can tomato sauce
- 10 oz bag frozen corn
- 2 10 oz cans diced tomatoes with green chilis
- 1 packet taco seasoning
- 1 tsp cumin
- 1 tsp chili powder
- 2 boneless skinless chicken breast
- ½ cup water

Crockpot Instructions
- Combine all ingredients into the slow cooker and cook on high for 3 hours or low for 6 hours.
- Take the chicken out and shred it, then add it back into the soup.
- Serve with your favorite soup garnishes!

I just made this and it’s wonderful. I used pinto beans rather than kidney beans. Can’t do kiidney beans. Wanted to add homily but didn’t. Can’t wait to be ready to eat. Chicken fell apart in pot when I opened it. This is a keeper. Enjoy enjoy enjoy

I’m 99.9999% sure pinto beans are not zero points as they are higher in fat than other beans. If you use pinto, that’s fine and sounds good, but the soup is no longer zero points.

This is delicious, and I’m eating it all week for lunch. However, when I enter it into the point calculator on the recipe builder on WW, I keep getting 1pt at 12 servings. I believe it has something to do with the kidney beans. When I enter in 15.5 oz it tallies that up as 9pts. What am I doing wrong?

You can delete my post. I contacted WW and they explained how to enter it into the system. There are still a lot of canned brands in the food bank that have points associated with them. Thanks again for the recipe. It’s delicious.

I added an extra cup of water and added it first, then the rest of the ingridents adding the tomato sauce on top and I still got a burn notice. When I opened it up everything seemed fine and the chicke was almost fully cooked. I added extra water just in case, so I put it back on the same setting and let it cook again?

I have made this many times in the crock pot. Made it today in my IP. The crock pot is better. The IP was good but more soupy. The crock pot makes it like a stew. Eliminate the water if using the crock pot.

New to IP cooking, is it the soup setting for 8 mins or is it just soup setting and if done on manuel setting for 8 mins.

Karen- When you use the soup setting, it typically means between 20 and 40 minutes cook time. You can adjust this if you want. However, by using manual setting and programming the pot for 8 minutes, it will cook for only 8 minutes at high temperature, and yes, for this recipe, everything will cook just fine. However, what you must know about this device, is that the “preheating” for your IP will take 20/25 or 30 minutes to preheat. THEN, there’s the 8 minutes to cook AND THEN, you have the release time (natural release about 10 minutes) so the whole Taco Chicken Soup will take up to 48 minutes to complete! Hope this helps you, keep using the IP, kinda technical at first, but you’ll be a pro in no time at all!

Made this tonight. Turned out perfectly and was delicious!! 1 1/2 cups water and included the liquid from the beans. 8qt. IP…used the Soup button. Took 30 minutes to pressurize.

I scanned all ingredients using WW app. It does register beans and corn as points, along with the taco seasoning. I measured out 1 cup servings and got 9 total servings at 4 points/serving.

I know all the ingrediants are 0 freestyle points…. However when you look at the freestyle ingediants checker it states that tortilla soup is 8 points.????

Followed the recipe but has “chili seasoned black beans” as that’s all I could find for seasoned. Didn’t add the chili powder as a result but followed the rest of the recipe exactly. This is a keeper. Other taco soups I have tried are too watery or not hearty or tasty enough. Enjoyed it with a dab of sour cream, a pinch of Mexican cheese mix and green onions!

I made this tonight and got burn on my instant pot. I tried again and it did the same thing. So I then took everything out of the pot and had to clean the bottom of the pot which was really burnt and start again. I put it on manual and on low this time. Hoping it still come out alright.

OMG! This is delicious! Followed directions exactly except I had only one can of tomatoes with green chiles but I also had a can of tomatoes with lime and cilantro so used them both. I made it today to have for lunches at work this week. I hope it lasts that long! My husband loves it as well so will have to share with him ;)
