Looking for a new spin on a zucchini side dish? Try these air fryer zucchini chips! Not only are they crispy and delicious, but they are also Weight Watcher friendly coming in at only 2 Smart Points!
Previously, every time I cooked zucchini I sauteed it with other veggies, which is fine most days. But when you are changing your lifestyle to become healthier, the same dish gets boring quickly!
These zucchini chips were a game-changer after I got my air fryer! Honestly, I couldn’t believe the crisp that I got without all the horrible effects of “fried food.”

Also, if you do not have a mandoline, I HIGHLY recommend getting one! I seriously don’t know how I sliced before!
Pair these zucchini chips with some Air Fried Salmon or Coconut Shrimp! If you have an Instant pot you could also make ZERO point Chicken, Turkey Breast and Gravy, or even Spiral Ham. This way you can use both appliances and be virtually mess free!
Air Fryer Zucchini Chips
Now on to the good stuff!
Ingredients for Air Fryer Zucchini Chips:
2 medium zucchini
1 egg beaten
1/2 cup of panko breadcrumbs
1 tsp paprika
Salt and pepper to taste
Oil for spraying, or butter (Parkay)
How to Make Air Fryer Zucchini Chips
- Slice the zucchini into circles
- Combine all of the dry ingredients into a bowl and mix.
- Dredge the zucchini into the beaten egg then into the panko mix.
- Place on the pan or in the basket (depending on which air fryer you have) in a single layer
- Cook for 10 minutes at 400 degrees or until crispy.
Cut the zucchini into circles (for chips)
Combine all of the dry ingredients into a bowl and mix.
Dredge the zucchini into the beaten egg then into the panko mix.
Place the breaded zucchini chips on the pan or in the basket (depending on air fryer model) in a single layer
Cook for 10 minutes at 400 degrees or until crispy.
Enjoy your crispy, delicious air fryer zucchini chips!
