You can now make these easy, delicious Blueberry Banana Muffins in the Instant Pot, oven, or air fryer! Perfect for breakfast or a snack! Ready in less than 25 minutes no matter what way you cook them.
Muffins are one of my absolute favorite foods and I could really eat them any time of day! If you happen to make blueberry banana muffins in the spring and summer, you should take a blueberry picking trip and try them with actual, fresh berries! Don’t forget to try my other favorite muffin recipe that is a family favorite!
If you are on Weight Watchers, you know recently there have been some changes. However, these blueberry banana muffins are 3 points no matter which plan you are following!
Blueberry Banana Muffins
This recipe includes instructions for using an Instant Pot, standard oven, and air fryer! I really recommend trying them all 3 ways if you can! Using the Instant Pot makes them ready in less than 15 minutes, but these will be a little denser than your typical muffin.
Air frying blueberry banana muffins are super easy! They need a little less time since air fryers cook by convection. Depending on which model you have you may need a special pan, or you can use these silicone ones!
Obviously using your standard oven is a no brainer! No special cooking tools needed, but if you like gadgets like me, I really like these liners. They are reusable and make it really easy to get the muffins out after cooking.
Can I freeze Blueberry Banana Muffins?
Absolutely! After cooking your muffins, be sure they are all the way cooled. Use a vacuum sealer for the best results. If you don’t have one, just store in a freezer bag.
How Should I store Blueberry Banana Muffins?
After letting the muffins cool completely, store in a Ziploc bag or airtight container. If you plan to eat them with 2-3 days you can leave them out at room temperature. If you want to keep the muffins fresher longer, store in the refrigerator.
Ingredients for Blueberry Banana Muffins
3 large ripe bananas
1/8 cup Truvia brown sugar blend
1 large egg
1 tsp vanilla extract
¼ cup olive oil
1 cup all-purpose flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp ground cinnamon
1/2 tsp salt
1/2 cup quick cook oats
1 cup blueberries, fresh or frozen
How to Make Blueberry Banana Muffins
This method is if you are using your oven.
- Mash bananas in a large mixing bowl.
- Add Truvia, egg, and vanilla extract and stir with a spatula until combined.
- Add oil and stir.
- Combine flour, baking powder, baking soda, cinnamon, salt, and oats. Gently stir into wet ingredients. Don’t overmix!
- Fold in blueberries.
- Line your muffin pan with paper or silicone liners.
- Divide about 1/4 cup of batter into each.
- Cook in your preheated oven on 375 for 20-25 minutes. Use a toothpick to check for doneness.
- Turn onto cooling rack or plate.
How to Make Blueberry Banana Muffins in the Instant Pot
- Mash bananas in a large mixing bowl.
- Add Truvia, egg, and vanilla extract and stir with a spatula until combined.
- Add oil and stir.
- Combine flour, baking powder, baking soda, cinnamon, salt, and oats. Gently stir into wet ingredients. Don’t overmix!
- Fold in blueberries.
- Spray the 2 silicone molds with non-stick spray. Divide about ¼ of a cup of batter into each slot
- Pour 1 cup of water into the Instant Pot. Place trivet in the inner pot.
- Stack one of the filled molds on top of a trivet. Line with parchment paper and stack the other mold on top
- Secure the lid and turn pressure release to the sealed position.
- Cook at high pressure for 10 minutes.
- When cooking is complete, natural release for 10 minutes and then release any remaining pressure.
- Let the muffins cool if needed
- Turn them over onto a cooling rack or plate. Enjoy!
If you decide to try it this way, you really need these molds that are made for the Instant Pot or the ones that come in this accessory set!
Can I make Blueberry Banana Muffins in my Air Fryer?
Yes!! Follow all instructions for mixing the batter. Preheat your air fryer to 375. Cook for 12-15 minutes. Times and temperatures may vary due to different models of air fryers!

As you read earlier, there have been changes to WW and now there are 3 programs to choose from. But these blueberry banana muffins are 3 points on all plans; Servings: 12
Tips for Making Blueberry Banana Muffins
- Using ripe bananas makes them a little sweeter and easier to mash
- Be sure to not overmix your batter! For this reason, I DO NOT recommend using an electric mixer.
- If you don’t have parchment paper when using your Instant Pot, you can separate by using aluminum foil.
- Don’t want to make two pans in the Instant Pot? No worries, still keep the time the same
- I really hate trying to measure out the batter, so this is what I use to get the perfect muffin every time!
- If you make blueberry banana muffins in your Instant Pot, THEY DO HAVE A DIFFERENT TEXTURE versus using the air fryer or oven. They are still outstanding, so you want to have the best of both worlds make one batch in the IP and the other in an air fryer or oven.
- Let them completely cool before storing or freezing.
