Instant pot mac and cheese is a family favorite! Anytime you have a get-together, this is a great side dish! Using the Instant Pot makes cooking easy with minimal cleanup! One thing I HATE about cooking pasta is constantly having to watch it and stir so often!

The Best Instant Pot Mac and Cheese
The key to cooking in your Instant Pot is to make sure you're adding spices just like you would if you were cooking on the stove!
Smoked Gouda Mac and Cheese
If you've been too scared to try pasta in your Instant Pot, have no fear… Smoked Gouda Mac and Cheese is here! This macaroni and cheese recipe is literally packed full of flavor (and cheeeeese!).
DIVIDE into 8 servings and they are 6 Smartpoints each. Serving size is about a cup.
Ingredients for Instant Pot Mac and Cheese:
2 cups uncooked macaroni noodles
2 cups water
1/2 cup evaporated milk
1 tbs butter
1/2 tsp salt
1 tsp cayenne pepper (or black pepper) to taste
1/2 cup shredded cheddar cheese
1/2 cup shredded smoked gouda cheese
How to Make Instant Pot Mac and Cheese
Combine macaroni and water in Instant Pot (I use this one) and cook on high pressure for 6-7 minutes.
**Make sure to stir noodles/water well before cooking to break up any clumps of noodles that might form.
When fully cooked, vent your cooker until steam runs out. Then open and dump in your cheeses, evaporated milk, salt, and butter.
Mix well for about 2 minutes or until you have an evenly thick/creamy consistency. Yum!!
Sprinkle with pepper of choice and serve.
