Since starting Weight Watchers I have found that I do not like many of the sugar-free options on the market; especially jellies and jams. Nothing is worse when you really just want a piece of 1 point toast but have nothing tasty to put on it. The regular jellies and jams are just too many points to make it worth it and the taste of the sugar-free is not for me.
I was walking through the farmers market and saw a jar of Apple butter but of course, I scanned it and it was 2 pts. Which isn’t too high but definitely more than I’d like to add for a quick snack or small side with breakfast. So, I came up with my own recipe and to make it even better, it’s an Instant Pot recipe. So easy and so quick, plus it makes your house smell fabulous as its cooking.
Instant Pot Apple Butter
Instant Pot Apple Butter
Ingredients
- 5 lbs of apples cored and sliced
- 1/2 cup brown sugar
- 1/4 tsp ground cloves
- 1/2 tsp ground nutmeg
- 1 tbsp cinnamon
- 2 tbsp apple cider vinegar
- 1 tbsp vanilla extract
- 1/4 cup water
Instructions
- Place apple slices into Instant Pot liner
- Sprinkle brown sugar and spices over apples
- Pour apple cider vinegar, vanilla extract, and water over the top
- Stir lightly
- Lock lid onto Instant Pot and set vent to sealing
- Cook on manual high pressure for 1 hour
- When Instant Pot beeps, release pressure and remove lid
- Use an immersion blender to puree apples
- Let cool and then place in an air tight container for up to 3 weeks
