Avocado Egg Salad Recipe

Anyway, let's get onto the reason for this post, shall we?

Avocado Egg Salad Recipe

This is almost too simple to be called a recipe, but… it's delicious so you've gotta try it!

Ingredients:

6 eggs
1 avocado
dash of salt
paprika

Directions:

Boil a dozen eggs – separate the egg whites from the yolks. You can use the yolks for something else, but for this recipe we are only using the egg whites.

Dice up the egg whites, cut up the avocados, add a dash of salt and mix. Sprinkle with paprika to make it pretty and stuff. :)

You can dress this egg salad up any way you'd like. Add peppers, mustard, onions, or any other ingredients you absolutely love. Make it southwest by adding peppers and chipotle sauce. The possibilities are endless!

We use avocados frequently in recipes. Just a few days ago, we had shrimp with avocado linguine. Rachel is definitely the biggest avocado fan in the house, but the girls don't mind them. I like them when.. they're flavored with chocolate. :)

Avocado Egg Salad

If you love avocados, you'll adore this tasty egg salad!

  • 6 Eggs
  • 1 Avocado
  • Dash of Salt
  • Paprika
  1. Boil a dozen eggs.
  2. Separate the egg whites from the yolks.
  3. Dice up the egg whites.
  4. Cut up the avocados.
  5. Add a dash of salt and mix up.
  6. Sprinkle with paprika and add any optional ingredients.
  7. Mix well, chill.
  8. Serve and Enjoy!

  1. OMG…when I went to Hawaii 2 years ago, they had the BEST avos there. There were so many different kinds! And they were HUGE! I spent most of my spending money on those and fresh coconuts! The island is known for all their different types! *now I’m craving to go back*

    1. You’re not kidding! I love their huge butter avocados! Haas are so small compared to those! We used to get them from the trees on the side of the road or if we couldn’t find any that way, we’d settle for the farmer’s market (which was awesome…they’d always throw in something free or give the kids an apple banana lol). I miss those HUGE avocados!

  3. Wow that looks so good! I am indeed crazy about avocados. I love their texture and flavor and eat them with and on many different foods. My absolute favorite is homemade guacamole with homemade tortilla chips. My husband won’t touch the stuff but that’s fine because that just means there’s always more for me. Thanks so much for blogging about it! I am definitely going to have to give this recipe a try.

  5. I love those ear rings! I sometimes make chicken salad using avocado. Egg salad sounds amazing though. I could eat avocados on/in almost anything. Can’t wait to meet you Thursday!

  6. I’ve been putting avocado slices in my wraps lately. I’ll take hummus, feta, tomatoes, onion, greens, cucumbers, and usually turkey or rotisserie chicken, and then add slices of avocado. Yummy!! My daughter loves them, too. I give her bites of sushi with avocado in it and she loves it!
