Avocado Egg Salad Recipe Weight Watchers Friendly – 4 Points!
Avocado & Egg Salad Recipe
If you are anything like me, you just LOVE avocados!!! If I could marry one, I would :)
Truthfully, I love to eat avocados all year. But, it's summertime, when its too hot to turn the oven on, that I REALLY love to eat them.
This Egg and Avocado Salad is absolutely perfect any time of year. It's WW Friendly and just 4 Points per serving.


You can dress this egg salad up any way you'd like. Add chopped red bell peppers, mustard, pickled onions, diced tomatoes, cilantro, etc. Make it southwest by adding peppers and Chipotle sauce. The possibilities are endless!

Instant Pot Avocado Egg Salad
Ingredients
- 6 Eggs
- 1 Avocado
- Dash of Salt
- Paprika
- Cilantro
- Lime - if you like
Instructions
- Cook 6 eggs. (cook for 3 minutes in Instant Pot) then allow to cool
- Dice up the eggs (I use the entire egg but you can use just egg whites if you prefer) Points include the yolk!
- Cut up the avocado
- Add a dash of salt and mix all
- Sprinkle with paprika, chopped cilantro and a squeeze of lime
- Mix well, chill and enjoy!

OMG…when I went to Hawaii 2 years ago, they had the BEST avos there. There were so many different kinds! And they were HUGE! I spent most of my spending money on those and fresh coconuts! The island is known for all their different types! *now I’m craving to go back*

You’re not kidding! I love their huge butter avocados! Haas are so small compared to those! We used to get them from the trees on the side of the road or if we couldn’t find any that way, we’d settle for the farmer’s market (which was awesome…they’d always throw in something free or give the kids an apple banana lol). I miss those HUGE avocados!

Wow that looks so good! I am indeed crazy about avocados. I love their texture and flavor and eat them with and on many different foods. My absolute favorite is homemade guacamole with homemade tortilla chips. My husband won’t touch the stuff but that’s fine because that just means there’s always more for me. Thanks so much for blogging about it! I am definitely going to have to give this recipe a try.

I love those ear rings! I sometimes make chicken salad using avocado. Egg salad sounds amazing though. I could eat avocados on/in almost anything. Can’t wait to meet you Thursday!

I’ve been putting avocado slices in my wraps lately. I’ll take hummus, feta, tomatoes, onion, greens, cucumbers, and usually turkey or rotisserie chicken, and then add slices of avocado. Yummy!! My daughter loves them, too. I give her bites of sushi with avocado in it and she loves it!
