Avocado Egg Salad Recipe #iloveavocados #mc
I don't know if I've told you guys that Rachel loves avocados a lot, but Rachel loves avocados. A lot.
If she could marry an avocado, she probably would. :)
Anyway, let's get onto the reason for this post, shall we?
Avocado Egg Salad Recipe
This is almost too simple to be called a recipe, but… it's delicious so you've gotta try it!
dash of salt
Boil a dozen eggs – separate the egg whites from the yolks. You can use the yolks for something else, but for this recipe we are only using the egg whites.
Dice up the egg whites, cut up the avocados, add a dash of salt and mix. Sprinkle with paprika to make it pretty and stuff. :)
You can dress this egg salad up any way you'd like. Add peppers, mustard, onions, or any other ingredients you absolutely love. Make it southwest by adding peppers and chipotle sauce. The possibilities are endless!
We use avocados frequently in recipes. Just a few days ago, we had shrimp with avocado linguine. Rachel is definitely the biggest avocado fan in the house, but the girls don't mind them. I like them when.. they're flavored with chocolate. :)
I participated in a campaign on behalf of Mom Central Consulting for Avocados from Mexico. I received a promotional item as a thank you for participating. For more info on Avocados from Mexico, check out their blog.
I signed up for the Avocados from Mexico Community to explore the avocado recipes they had, and was surprised at how many of them were super simple. That's where the avocado egg salad recipe came from!
One thing I love about the Avocados from Mexico Community is the virtual shopping list! See a recipe you love? Add ingredients to a virtual shopping list. I love the convenience of someone else creating a shopping list for me.
