I love this Weight Watchers Tater Tot Casserole because it's low points and easy to make. It's not healthy by any means so it's not something you want to eat every night, but it's one of those nice treats that you can enjoy while following the Weight Watchers program!
Weight Watchers Tater Tot Casserole
1 can (10.5 oz) 98% fat free condensed cream of mushroom soup
1 cup fat free ranch dressing
1/4 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1 cup light shredded Cheddar cheese
3/4 cup sliced green onions
32 ounce bag frozen tater tots
optional: chicken, for added protein
If you add chicken to this Weight Watchers Tater Tot Casserole, use boneless skinless chicken breast so it only adds 1PP per serving.
Heat oven to 350°F. Spray baking dish with cooking spray. Mix condensed soup, 1/2 cup dressing, the garlic powder, salt, pepper and 1/2 cup of the cheese until mixed well. Stir in chicken (if using) and 1/2 cup of the green onions.
Place half of the frozen tater tots in single layer on bottom of your baking dish. Spread mixture on top of potatoes. Top with remaining potatoes.
Bake for 45 minutes. Top casserole with remaining 1/2 cup cheese. Bake 10 minutes longer, until cheese is melted. Drizzle with remaining ranch dressing and top with remaining 1/4 cup sliced green onions.
Points breakdown for 6 servings:
soup – 1PP / 1SP
cheese – 1PP / 1SP
tater tots – 4PP / 2SP
