Instant Pot Lo Mein
Delicious Instant Pot Lo Mein!!
2 cups partially cooked rice noodles (I use precooked Kame brand Thai Rice Noodles)
1/3 cup sliced carrots
1/3 cup chopped broccoli
1/3 cup snow peas
1/3 cup fresh spinach leaves
1/4 cup soy sauce - reduced sodium
1 cup water or veggie broth
1/3 cup brown sugar
2 tsp garlic
1 tbs corn starch
1/2 tsp fresh ginger
pepper to taste
Pour 1 cup water in your cooker basin, and cover with noodles and chopped veggies except for spinach.
Mix up soy sauce, brown sugar, garlic, corn starch, ginger, and pepper. Add to noodle mixture.
Close cooker lid, set to high pressure, and cook for 2 minutes. (If using uncooked noodles, cook for 4).
Stir in spinach as soon as you open the lid, then serve.
*Sauce is very watery at first, but will thicken when cooking.
*Best if used in 6qt Instant Pot.
