Rachel, Nell, and Gracelynn have all decided they're going to be vegetarians again. Saff and I are still eating chicken, tuna, and turkey. Anyway, because we have some veggies in the family again we have been eating lots of beans! I just add chicken to mine if I really want it, but some recipes are so delicious, filling, and protein-packed that I don't need to add it. This Simple Black Bean Chili Recipe is one of those recipes.

I love chili, probably a little too much. I usually put it in the Crock Pot but sometimes I'll do a recipe like this where you can just dump it all, stir, and EAT.

Ingredients

2 cans black beans (2 PointsPlus per 1/2 cup)
1 jar mild salsa (0 PointsPlus)
1/3 cup vegetable stock (0 PointsPlus)
heat to taste (I used habanero seasoning)
garlic to taste (I added 1/2 tbsp)
dash of cumin
parsley for garnish

This recipe serves 6, but if you're measuring it all out, 1/2 cup of black beans is 2 PointsPlus. Everything else in the recipe is FREE and 0 PointsPlus. Add other veggies if you want it to be even more filling without adding points.

Chili is great for the fall, which can't get here soon enough in Arizona! We're waiting as patiently as we can! This hearty vegetarian black bean chili is easy, delicious and very low in calories!

  • 2 Cans Black Beans
  • 1 Jar Mild Salsa
  • 1/3 C. Vegetable Stock
  • Heat to Taste (Habanero Seasoning, for example)
  • Garlic to Taste (approximately 1/2 tablespoon)
  • Dash of Cumin
  • Parsley for Garnish
  1. Dump all ingredients in a large pot.
  2. Cook on 15 minutes on med-high, stirring often.
  3. Serve garnished with parsley. Enjoy!
