The pineapple holiday mocktail I'm posting today was made for my wife, Rachel. She loves coconut, and though she isn't as obsessed with pineapple as I am, she does like it! She's been sober for 8 years now so we don't have any alcohol in the house but sometimes it feels nice to sit down and have a “grown up” nonalcoholic drink. I love fruity drinks, so I made mine with pineapple juice (no coconut!) and lime sparkling soda (again, no coconut!).
