Easy Spicy Falafel Recipe
All three of our girls gave this recipe a thumbs up! I felt that the mixture was a bit dry so I tweaked the recipe a bit and now it’s perfect! The dips will also help if yours turn out dry. These reminded me of the consistency of hush puppies, almost but not quite. I think it’s definitely a kid-friendly recipe! Let me know what your kiddos think.
Ingredients
2 cans chickpeas
2 eggs
2 tablespoons olive oil
2 cups panko breadcrumbs
2 cloves garlic
2 tablespoons sriracha
salt and pepper to taste
fresh parsley (optional – to help with dry texture)
oil for frying
Directions
In food processor, combine all ingredients except breadcrumbs. Empty ingredients into bowl and mix in breadcrumbs.
Heat oil for frying. Roll into small balls and fry a few at a time for about a minute on each side (maybe less depending on the size of the falafel, and the temperature of the oil).
Set on stack of paper towels to drain oil. Serve with sauces as listed below.
Spicy Mayo
Mix 1 cup mayo with 2 tablespoons sriracha and 1/2 teaspoon garlic powder.
Greek Yogurt Ranch
Mix 1 cup Fat Free Greek Yogurt with 2 teaspoons ranch mix. Serve cold.
