Easy Spicy Falafel Recipe

Easy Spicy Falafel Recipe

All three of our girls gave this recipe a thumbs up! I felt that the mixture was a bit dry so I tweaked the recipe a bit and now it's perfect! The dips will also help if yours turn out dry. These reminded me of the consistency of hush puppies, almost but not quite. I think it's definitely a kid-friendly recipe! Let me know what your kiddos think.

2 eggs
2 tablespoons olive oil
2 cups panko breadcrumbs
