Easy Spicy Falafel Recipe

Ingredients

  • 2 Cans Chickpeas
  • 2 Eggs
  • 2 Tbsp. Olive Oil
  • 2 C. Panko Breadcrumbs
  • 2 Cloves Garlic
  • 2 Tbsp. Sriracha
  • Salt and Pepper to taste
  • Fresh Parsley Optional – to help with dry texture
  • Oil for Frying

Instructions

  • In food processor, combine all ingredients except breadcrumbs.
  • Empty ingredients into bowl and mix in breadcrumbs.
  • Heat oil for frying.
  • Roll mix into small balls and fry a few at a time for about a minute on each side (maybe less depending on the size of the falafel and the temperature of the oil).
  • Set on stack of paper towels to drain oil.
  • Make Spicy Mayo by mixing 1 cup mayo with 2 tablespoons sriracha and 1/2 teaspoon garlic powder.
  • Make Greek Yogurt Ranch by mixing 1 cup Fat Free Greek Yogurt with 2 teaspoons ranch mix.
  • Serve Falafels and Dips together. Enjoy!
