The strawberries can also be prepared ahead of time. Store them in a separate airtight container in the fridge. When youโ€™re ready to serve, assemble the shortcake and enjoy.

You do not want to assemble to WW strawberry shortcakes until you are ready to serve. The biscuits will get soggy while it is stored in the refrigerator. However, if you have leftovers of already assembled desserts, place them in the refrigerator in an airtight container and try to eat them within a day.

Can I Use Sugar Substitute

I am using regular brown sugar for the strawberries and using a bit of white sugar in the biscuits. This gives that decadent dessert taste even though this is low in points. When I calculated the points in this recipe, I counted it as regular sugars and the points are surprising low. If you wanted, there are brown sugar substitutes as well as white sugar substitutes that you can use. This will lower the points but for some people, it will give the desert an aftertaste.

How many points is strawberry shortcake?

In a traditional strawberry shortcake there can be a lot of points. Most recipes come in at about 12 points per serving. This recipe for WW strawberry shortcake is only _ points per serving. So, you can enjoy this dessert without having to worry about overindulging.

Strawberry Shortcake

Ingredients

  • cooking spray
  • 2 tbsp brown sugar
  • 1 1/4 cups all purpose flour
  • 1 tbsp granulated sugar, divided
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 3 tbsp chilled butter, cut in small pieces
  • 9 tbsp nonfat buttermilk
  • 2 cups strawberries quartered
  • 6 tbsp sugar free whipped topping

How to Make Weight Watchers Strawberry Shortcake

Preheat oven to 400 degrees

Toss strawberries in brown sugar and stir occasionally for 30 minutes

Combine flour, 2 tsp granulated sugar, baking powder and salt in a bowl and cut in butter with pastry cutter until it seems like a coarse meal

Add in buttermilk and stir until flour mixture is moist

Knead dough 3 times on a lightly floured surface

Pat dough into a 6×4 inch rectangle and cut it into 2 inch squares

Now coat the top of each biscuit with cooking spray and sprinkle with 1 tsp sugar

Place on baking sheet coated with cooking spray & bake at 400 for 15 minutes, until golden brown

Remove from pan and cool 15 minutes on wire rack

Once cooled, cut biscuits in half, top with strawberry mixture and cool whip. Enjoy!
