Easy Valentines Day Cupcake Recipes

Oh. My. Goodness. My friend, Tammy, sent me a photo of a cupcake that looked kind of like this one, and I fell in love right away! With me being on a total cupcake kick lately, I knew I had to make them.

If you're looking for unique and Easy Valentines Day Cupcake Recipes, look no further!

I made the frosting using a basic buttercream recipe, and added two tablespoons creamy peanut butter. You can use whichever frosting recipe you'd like, just make sure it's not too light – it needs to be stiffer than regular frosting.

French Vanilla Cupcakes

Recipe Type: Desserts

Ingredients
  • 1 cup butter, softened
  • 2 cups sugar
  • 4 eggs
  • 2 3/4 cups flour
  • 2 1/4 teaspoon baking powder
  • 3/4 teaspoon salt
  • 1 cup milk
  • 2 tablespoons vanilla extract
  • Miniature Reese's, for topping
  • Sprinkles, for topping, optional
Instructions
  1. Preheat oven to 350 degrees.
  2. Beat the butter until fluffy.
  3. Add sugar and beat until well blended.
  4. Mix in eggs, one at a time, and beat well.
  5. Add in flour mixture, then the milk and vanilla. Mix well.
  6. Fill cupcake liners 1/2 full and bake 20-25 minutes or until knife inserted comes out clean.
  7. Allow cupcakes to cool before frosting and adding miniature Reese's.

Ingredients

  • 1 C. Butter softened
  • 2 C. Sugar
  • 4 Eggs
  • 2 3/4 C. Flour
  • 2 1/4 Tsp. Baking Powder
  • 3/4 Tsp. Salt
  • 1 C. Milk
  • 2 Tbsp. Vanilla Extract
  • 1/2 C. Butter softened
  • 4 C. Confectionersโ€™ Sugar
  • 2 Tsp. Vanilla Extract
  • 5 to 6 Tbsp. Heavy Cream or Whole Milk
  • 2 Tbsp. Creamy Peanut Butter
  • Miniature Reeseโ€™s for topping
  • Sprinkles for topping, optional

Instructions

  • Preheat oven to 350 degrees.
  • Beat the butter until fluffy.
  • Add sugar and beat until well blended.
  • Mix in eggs, one at a time, and beat well.
  • Add in flour mixture, then the milk and vanilla. Mix well.
  • Fill cupcake liners 1/2 full and bake 20-25 minutes or until knife inserted comes out clean.
  • While cupcakes cool, prepare Easy Butter Cream Frosting (Thank you MojoSavings.com) by combining the butter, confectioners sugar, vanilla extract, and heavy cream or whole milk together in a large bowl. Add creamy peanut butter to the other ingredients and mix all together with an electric mixer. Add milk as needed for consistency desired.
  • Frost cupcakes and add miniature Reeseโ€™s to the tops.
  • Serve and Enjoy!

    These are SO cute… I’ve seen this idea on Pinterest, but I’ve never tried it because I’m allergic to peanut butter. I realized today, though, that they make caramel filled cups too! So I think I will be trying these now :)

    I have never seen a cupcake like this before and I really thought that you had a miniature cupcake on top before I read through the ingredients. Very clever. I may have to try this one day when I get into the cupcake making mood again.

    This one looks great for the older kid set! They would love cupcake on cupcake. For me, it’s a little too much. The cupcake and frosting though sound so awesome that I guess I will be back in the kitchen tomorrow. Maybe half with, half without the little “cupcake”. And I believe this time I may eat one or two. I’ve been good lately. I deserve it :) Keep rockin’ girl!

    THIS! This will be my husbands birthday cake! He loves peanut butter cups, and I think this would be perfect! I wonder if they would fit in my cupcake stand or if they are too tall…who cares! Maybe I’ll make a round cake and decorate it the same as this with one of those jumbo peanut butter cups, then put these cupcakes around it…the ideas are pouring in now!

    Yummy! This recipe looks amazing! I don’t like chocolate (I know- How can I be female and not like chocolate? -It’s a curse) and I have never made cupcakes (or any cake) from scratch before. This recipe uses ingredients that I already have on hand (except the Reese’s) so I am going to try to make it this weekend. This recipe totally helps with my “resolution” to be more of a baker! Thanks for the great post and it gets my vote!

    This combines two of my favorites peanut butter cups and french vanilla I am not sure how much better this one could get. Plus I am sure my kids would go crazy over this one, I have to try it out soon.

    I am going for THIS cupcake since I am all about the vanilla flavor in all baked goods more than chocolate AND I dig the peanut butter garnish (so to speak) and have to tell you something cause I will always snag vanilla ice cream and slap melted peanut butter on top for a “go to sundae” in a heart beat!

    As soon as I saw these in my FB feed I knew they were going to be my next baking project.I did some with the vanilla cupcake&some with the mocha cupcake(best of both worlds).My 5 yr old LOVED them.Only problem:He wanted to eat all the “baby” cupcakes off the top.Solution:I made extra “baby”Reese’s cupcakes on the side:-)

    YUMMEEE! I love cupcakes. Fortunately, my sister is an awesome baker. Whenever I ask she whips up the most delicious cupcakes for me. One of my favorites is a chocolate peanut butter one. So good. Her cupcakes are the only ones my son will eat. He doesn’t like sweets.

    I love french vanilla. Whenever we get box mixes I opt for the french vanilla over the traditional yellow or white. It has a little but sweeter taste and usually moister. And then to add Peanut Butter, I am sure this one taste very good!. A comfort cupcake.

    Can I just say that I love cupcakes? Cupcakes and peanut butter, I’m in frosting heaven!! YUM! You wooed me with the French Vanilla and then swayed me with the peanut butter cup! I love the wrappers and the icing with the oh so fun sprinkles! I think I’ll eat like 6 of these!
