We started eating meat a few months ago, mostly chicken and turkey. I have noticed an increase in energy for myself, but nobody else in the family seems to feel much different – they were fine before, but I wasn’t. After visiting several specialists, the consensus was that I had to go back to eating meat if I wanted to feel better. I resisted for a good 8 months or so, but after feeling like shit for so long I knew I had to try something. Anything. Almost immediately after introducing chicken back into my diet, I did start to feel better. My digestion issues aren’t solved by any means, but they have improved as well.
Anyway, long story short, I’m still lazy as you know what when it comes to cooking dinner, so sheet pan meals and slow cooker meals are my “go to” for dinner.
Chicken and Pasta Sheet Pan Meal
Recipe inspired by Chicken & Cannellini Marinara from 200 Best Sheet Pan Meals.
Ingredients:
4 boneless skinless chicken breasts, cut into 1 inch cubes
1 can (28oz) diced tomatoes
1/2 teaspoon garlic powder
salt + pepper
cayenne pepper
3 tablespoons olive oil
1 can (14-19oz) chickpeas, drained
1lb pasta of choice, cooked and mixed with 1 jar marinara sauce
optional: parmesan cheese + green onions for garnish
Directions:
Preheat oven to 400*F.
Place tomatoes and their juice on prepared pan (foil + cooking spray). Add garlic, salt, pepper, cayenne pepper, and 2 tablespoons oil to pan. Bake for 10 minutes.
Remove pan from oven. Add chicken, chickpeas, and 1 tablespoon oil. Add more cayenne pepper if desired.
Roast for about 15 minutes, or until chicken is cooked thoroughly. Season to taste. Serve with cooked pasta and marinara sauce. Garnish with green onions and/or parmesan.

- Bake for 10 minutes.
- Remove pan from oven.
- Add chicken, chickpeas, and 1 tablespoon oil.
- Add more cayenne pepper if desired.

- Serve with cooked pasta and marinara sauce.
