Warning: Once you try this Cheesy Street Corn Recipe, you won’t want to go back to regular corn on the cob ever again!
Mexican Street Corn actually has lime juice sprinkled on, so if you’re looking for a more authentic twist on this Cheesy Street Corn Recipe, feel free to add some lime! We don’t really like lime, so we skipped it. All three of our girls absolutely loved this corn, and we all had seconds! The feta cheese has a nice texture and flavor, and even though I’m not a huge fan of mayo, the mixture of mayo, garlic, and cayenne is perfect! The corn took about an hour to boil, but the rest of the process literally takes five minutes. I think this would be an awesome dish for Thanksgiving. I love making new things every year and surprising everyone! This is definitely a new favorite in our house. Be sure to let me know what you think of it once you give it a try.
Cheesy Street Corn Ingredients:
6 ears corn on the cob, husks removed
3/4 cup mayonnaise
1/2 teaspoon garlic powder
1/4 teaspoon cayenne pepper
1/2 lb feta cheese-crumbled
Cooking Cheesy Street Corn:
Combine mayo, garlic powder, and cayenne pepper in a bowl. Set aside.
Boil corn until it is tender. Set corn on paper towels, then spread a thin layer of the mayo mixture onto the corn one piece at a time.
Roll corn into crumbled cheese to coat. We put it on a pan lined with foil and it worked out well.
