It’s been a while since I’ve done a menu plan so I’m going to try and start it up again. No promises on how consistent it will be. :) Most of the recipes linked are just starting off points for me. I don’t like to follow recipes, so if I see “black bean burger”, I will just make my own – but because I’m super lazy and not posting my personal recipes this week, I figured these recipes would help you get started as well.
Even if you aren’t a vegetarian, these meals all rock! And, if you must, you could always add some chicken!

Lunch: Peanut Butter & Banana Sandwiches
Dinner: Bean Burritos
Wednesday
Breakfast: Super Breakfast Smoothies
Lunch: Savory Spinach and Feta Muffins
Dinner: Egg Salad
Thursday
Breakfast: Homemade Pop Tarts
Lunch: Tomato and Cheese Sandwiches

sounds really good. I try to make weekly menus to they really help keep us on track and organized. I may have been slacking the last couple weeks and it really shows.

I thought I’d NEVER get to the point where I could go meat-free even for one day much less permanently. I started out with Meatless Mondays and actually gave up on them. Then, I realized how unhealthy meat was for my body – and got to see firsthand how long red meat stayed rotting in my stomach – and the next week I went vegetarian 100% and haven’t looked back!
My kids are wheat free and gluten free eaters. When we start back to school, we have to remove the little bit of craziness I have relaxed and allowed in the summer months. Any processed foods and sometimes certain meats cause stress in their school days that we can avoid by having a meat free diet. This plan is one we can adopt and adapt for the first week of school, so I am pinning it for that reason. Thanks, Sadie. Now I can work smarter and not harder. You rock, as usual.

I love this, thanks for sharing. I personally hate meat and always want to add more vegetarian meals in, but can never find ones I like, or should say that the kids will like.
