This vegetarian chili recipe is super easy (dump it and forget it!). I infused the boxed/canned ingredients with herbs and fresh veggies to make it the perfect robust veggie chili for Fall. I like to bring this chili to potlucks because everyone loves it, but just in case nobody else brings a vegetarian dish, veggie-heads can still eat! :)
Technically, without the cheese, it’s a vegan recipe, too. Make your own broth if you want to make it gluten-free as well.
Easy Vegetarian Chili Recipe
The girls love chili so much, we are always trying different recipes. This is probably the best one I’ve tried so far. If you want to add meat to make it heartier for your husband who “can’t live without meat”, you can totally do that, too! ;)

Chop your veggies!
Really, this is so simple… you dump everything into the slow cooker and cook on high for 4 hours (or low for 6 hours) and it’s ready to eat!
Sprinkle with cheeeeeese if you want. What am I talking about? Of course you want. :D It’s cheese!!

Easy Vegetarian Chili
Ingredients
- 1 Box Tomato Sauce
- 1 C. Vegetable Stock
- 1 Can Black Beans
- 1/2 of each: Chopped Green Pepper Chopped Yellow Pepper, Chopped Onion
- 2 Sweet Potatoes diced
- 1/2 Can Chopped Green Chilies
- A few shakes of Garlic
- A few shakes of Cumin
- A few shakes of Chili Powder
- 1 Tbsp. Honey
- 1 Tsp. Smoked Paprika
Instructions
- Chop up all vegetables.
- Dump everything into a slow cooker and cook on high for 4 hours (or low for 6 hours).
- Serve in bowls sprinkled with cheese.
- Enjoy!
