Peanut Butter Cup Smoothie: Healthy Breakfasts With Slap Dash Mom

I like to pair this with a hard boiled egg for a filling protein-rich breakfast. Even the smoothie on its own has about 50 grams of protein though. :) Weighing in with less than 300 calories per serving, this Peanut Butter Cup smoothie will remind you of a Reese’s, but with added healthiness!

Peanut Butter Cup Smoothie

Ingredients:

2 cups chocolate flavored light soy milk
1/3 cup reduced fat peanut butter
1/3 cup unsweetened cocoa powder
2-3 cups ice, depending on how thick you like your smoothies
1/4 cup honey
1/4 teaspoon salt
optional: oats

Directions:

Combine all ingredients, in order, in a blender. Blend until mixture is smooth. Serves 4.

Genevieve - I would say go for a natural peanut butter — or even better, go for almond butter where the only ingredient is organic almonds. :) Then you’re getting GREAT fat, not the nasty kind. Also, unless it is organic soy, that is GMO soy milk you’re drinking. Instead why not do coconut milk or almond milk (be sure to check the ingredients!) and add coco powder to the mix? That way you don’t get the added sugar and crap in the soy milk but still a healthy, yummy mix. Great idea though, I’ll have to try it with my own substitutions.

Kristin - You could switch out the peanut butter for pb2 and make it even less calories.with the same tyummy peanut butter taste!
