WeightWatchers Inspired Tabbouleh Recipe

Ingredients

  • 1/2 cup uncooked bulgur
  • 1/2 cup boiling water
  • 1 cup chopped tomatoes
  • 3/4 cup finely chopped parsley (fresh)
  • 3/4 cup finely chopped cilantro (fresh)
  • 2/3 cup chopped cucumber
  • 1/2 cup chopped green onions
  • 1/4 cup chopped fresh mint
  • 3 tbsp fresh lemon juice
  • 2 tbsp extra virgin olive oil
  • 1/2 tsp salt
  • 1/8 tsp fresh ground pepper
  • 8 Kalamata olives chopped
  • 1/4 cup finely chopped red bell pepper

Instructions

  • Combine the bulgur and boiling water in medium sized bowl
  • Cover and let it stand for 30 minutes
  • Add tomato and the next 11 ingredients and gently mix well
  • Cover and let stand a room temp for 30 additional minutes
  • Serve & enjoy
  • Recipes makes four 1.5 cup servings. 3 Points per Serving
