Weight Watchers Strawberry Shortcake

The amazing recipe is made with a bit of brown sugar instead of all granulated - this gives it an unexpected flavor of depth.

Ingredients

  • cooking spray
  • 2 tbsp brown sugar
  • 1 1/4 cups all purpose flour
  • 1 tbsp granulated sugar, divided
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 3 tbsp chilled butter, cut in small pieces
  • 9 tbsp nonfat buttermilk
  • 2 cups strawberries quartered
  • 6 tbsp sugar free whipped topping

Instructions

  • Preheat oven to 400 degrees
  • Toss strawberries in brown sugar and stir occasionally for 30 minutes
  • Combine flour, 2 tsp granulated sugar, baking powder and salt in a bowl and cut in butter with pastry cutter until it seems like a coarse meal
  • Add in buttermilk and stir until flour mixture is moist
  • Knead dough 3 times on a lightly floured surface
  • Pat dough into a 6x4 inch rectangle and cut it into 2 inch squares
  • Now coat the top of each biscuit with cooking spray and sprinkle with 1 tsp sugar
  • Place on baking sheet coasted with cooking spray & bake at 400 for 15 minutes, until golden brown
  • Remove from pan and cool 15 minutes on wire rack
  • Once cooled, cut biscuits in half, top with strawberry mixture and cool whip. Enjoy!
