Weight Watchers Strawberry Shortcake
The amazing recipe is made with a bit of brown sugar instead of all granulated - this gives it an unexpected flavor of depth.

- cooking spray
- 2 tbsp brown sugar
- 1 1/4 cups all purpose flour
- 1 tbsp granulated sugar, divided
- 2 tsp baking powder
- 1/2 tsp salt
- 3 tbsp chilled butter, cut in small pieces
- 9 tbsp nonfat buttermilk
- 2 cups strawberries quartered
- 6 tbsp sugar free whipped topping
Preheat oven to 400 degrees
Toss strawberries in brown sugar and stir occasionally for 30 minutes
Combine flour, 2 tsp granulated sugar, baking powder and salt in a bowl and cut in butter with pastry cutter until it seems like a coarse meal
Add in buttermilk and stir until flour mixture is moist
Knead dough 3 times on a lightly floured surface
Pat dough into a 6x4 inch rectangle and cut it into 2 inch squares
Now coat the top of each biscuit with cooking spray and sprinkle with 1 tsp sugar
Place on baking sheet coasted with cooking spray & bake at 400 for 15 minutes, until golden brown
Remove from pan and cool 15 minutes on wire rack
Once cooled, cut biscuits in half, top with strawberry mixture and cool whip. Enjoy!
