Instant Pot Lo Mein

  • 1 tablespoon sesame oil
  • 2 cloves minced garlic
  • ½ cup diced red onion
  • 2 cups sliced mushrooms
  • 1 cup julienned carrots
  • 1 cup snow peas
  • 2 tablespoons rice wine vinegar
  • 1 ½ cup vegetable stock
  • Juice of 1 lemon
  • 3 tablespoons soy sauce
  • cup brown sugar
  • 8 oz lo mein/rice noodles
  • Salt & Pepper to taste


  • Saute sesame oil, garlic, and red onion until tender
  • Add rice wine vinegar, vegetable stock, lemon juice, soy sauce, and brown sugar and mix until blended well
  • Add uncooked lo mein/rice noodles
  • Add carrots, mushrooms, and snow peas
  • Lock lid and set vent to sealing
  • Press manual button and set to high for 5 minutes
  • Quick pressure release carefully
  • Serve and Enjoy!
