Turkey Waldorf Salad

Easy waldorf salad that can be made vegetarian in a jiffy!

Ingredients

  • 1 cup cold turkey breast chopped
  • 1/4 cup light Mayo
  • 2 apples cored and chopped
  • 1 cup seedless grapes sliced in half
  • 1 cup celery thinly sliced
  • 1/4 cup walnuts chopped
  • Lettuce optional for serving
  • 1 Tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  • Combine the turkey, mayonnaise, apples, grapes, celery and walnuts.
  • Season with lemon juice, salt and pepper.
  • Best if allowed to "marinade" overnight in the fridge.
  • Serve on a bed of lettuce, or mixed with your favorite salad mix.
