Turkey Waldorf Salad
Easy waldorf salad that can be made vegetarian in a jiffy!

- 1 cup cold turkey breast chopped
- 1/4 cup light Mayo
- 2 apples cored and chopped
- 1 cup seedless grapes sliced in half
- 1 cup celery thinly sliced
- 1/4 cup walnuts chopped
- Lettuce optional for serving
- 1 Tablespoon lemon juice
- Salt and pepper to taste
Combine the turkey, mayonnaise, apples, grapes, celery and walnuts.
Season with lemon juice, salt and pepper.
Best if allowed to "marinade" overnight in the fridge.
Serve on a bed of lettuce, or mixed with your favorite salad mix.
