Instant Pot Meatloaf

Ingredients

  • 1 lb ground beef 93% lean or ground turkey
  • 2 slices of white bread crumbled low calorie
  • ½ small onion diced
  • ½ green pepper diced
  • ¼ tsp salt
  • Pepper
  • ¾ c ketchup
  • 1 egg
  • 1 cup of water

Instructions

  • Mix together ground beef, onion, green pepper, egg, salt, pepper, and crumbled bread slices.
  • Add ¼ to ½ cup of ketchup and mix.
  • Pour water into Instant Pot.
  • Place trivet in.
  • Shape meat mixture into a loaf, and set it on a piece of aluminum foil. *Foil sheet should be big enough that you can “make a loaf pan” around the meatloaf. Or use the Instant Pot Loaf Pan
  • Place loaf on top of the trivet.
  • Turn valve to sealing position
  • Cook on manual/high pressure for 25 minutes, and natural release for at least 10 minutes.
  • Use remaining ketchup to top meatloaf.
  • Finish in the oven/broiler if desired.
