Mushroom Risotto

Mushroom risotto is a classic Italian dish that is enhanced when mushroom powder is added. This dish already has mushrooms, and when you add the mushroom powder, the mushroom flavour is further intensified, making for a rich and more flavourful risotto dish.

Ingredients

  • Chicken broth
  • Mushrooms
  • Olive oil
  • Shallots
  • White wine
  • Butter
  • Arborio rice
  • Parmesan cheese
  • Chives
  • Mushroom powder

Instructions

  • Heat the broth
  • Toast the rice in hot oil until they start turning translucent around the ends.
  • Stir continuously.
  • Keep adding broth with the mushroom powder by half a cup, and then stir some more.
  • Ensure you evenly distribute the broth.
  • Keep stirring for 30 minutes until all the broth is absorbed.
  • Keep the broth hot and simmer the risotto at a low temperature.
  • When the rice is al dente, the risotto is done. You want a texture that is firm and not crunchy.
