Roasted Artichokes with Remoulade
Servings for Artichokes: 2; 2 Smartpoints per serving
Remoulade: 1 Smartpoint per serving. Feel free to make more just by doubling or tripling!

- Ingredients for Roasted Artichokes
- 3 Tsp Olive Oil
- 4 Fresh artichokes halved
- 1 head of garlic
- Salt and pepper
- Ingredients for Roasted Artichoke Remoulade
- 1 tbsp mayo fat-free
- 1 teaspoon Creole mustard
- Lemon juice 1/2 of lemon, squeezed
- Hot sauce to taste Tabasco or Texas Pete
Preheat air fryer to 390 degrees.
In a small bowl, crush a head of garlic and into the olive oil.
Steam artichokes for about 10 minutes on the stove, then remove and cut in halves.
Spoon garlic mixture into each halved artichoke. Add salt and pepper to each.
Air fry for 4 minutes at 390 degrees.
