Cinnamon Apple Oatmeal with Caramel

Nothing is better on a Monday morning than Caramel and Apples in your oatmeal! This makes 1 serving and is 4 Smartpoints!

  • ½ C. oats
  • 1 C. almond milk divided.
  • ½ C. water
  • 1 tsp. vanilla extract
  • 2 tsp cinnamon
  • 8 dates pitted (fresh)
  • 1 medium apple
  • 1 tbsp. flax seeds


  • In a blender, add ½ the almond milk, dates and vanilla extract.
  • Blend until smooth. This is your “caramel”
  • Chop apple into small pieces and set aside.
  • Combine oats, water, remaining ½ C. almond milk and cinnamon to a small pot.
  • Cook on low for 5 minutes on low/medium, frequently stirring.
  • Add apples and flax seeds to oatmeal and stir until combined.
  • Add ¾ off the date “caramel” and mix.
  • Serve in a bowl and top with remaining date caramel.
