Fresh Fruit Popsicles

Cool off this summer with fresh fruit popsicles!

Ingredients

  • 2 cups fresh strawberries
  • 1 package blueberries
  • 1 package raspberries
  • 1 blood orange
  • 1 cup Greek yogurt non-fat or coconut milk
  • 1 tsp sugar

Instructions

  • Cut strawberries, then saute with sugar for 10 minutes until they cook down to a jam texture. Pour into a bowl and set in the fridge to chill.
  • Blend blueberries into a liquid, then do the same for the raspberry and blood orange together.
  • Grab a set of popsicle molds and your strawberries out of the fridge, and then pour a little of each fruit in, alternating between fruits, and coconut milk/yogurt. You can build your popsicles however, but here are the ones that I did:
  • Strawberry in the bottom, followed by coconut milk, followed by blueberries. To make a mixed/swirled look, dip a fork in several times up and down.
  • Blueberry in the bottom half, then mix raspberry/orange with 1 tsp Greek yogurt and pour in the top half. Swirl colors together with a fork.
