Easy Cauliflower Mash

Cauliflower mash is a great low-carb substitute for mashed potatoes, and so easy to make!

Ingredients

  • 1 Head Cauliflower cut into florets
  • 2 Garlic Cloves peeled and smashed
  • 1 Tbsp. Olive Oil
  • 1/4 C. Grated Parmesan
  • 1 Tbsp. Butter
  • Salt and Pepper to taste

Instructions

  • Steam cauliflower.
  • While cauliflower is steaming, heat olive oil in a small skillet over medium heat.
  • Cook the garlic until softened, stirring constantly.
  • Once the cauliflower is cooked, transfer half to a food processor. Cover and chop.
  • Add the remaining florets and process until creamy.
  • Add in all other ingredients and blend some more.
  • Top with green onions.
  • Serve and Enjoy!
