Easy Cauliflower Mash
Cauliflower mash is a great low-carb substitute for mashed potatoes, and so easy to make!

- 1 Head Cauliflower cut into florets
- 2 Garlic Cloves peeled and smashed
- 1 Tbsp. Olive Oil
- 1/4 C. Grated Parmesan
- 1 Tbsp. Butter
- Salt and Pepper to taste
Steam cauliflower.
While cauliflower is steaming, heat olive oil in a small skillet over medium heat.
Cook the garlic until softened, stirring constantly.
Once the cauliflower is cooked, transfer half to a food processor. Cover and chop.
Add the remaining florets and process until creamy.
Add in all other ingredients and blend some more.
Top with green onions.
Serve and Enjoy!
