Gluten Free Apple Pie

Pie so good, you won't even know it's gluten free! I promise!

Ingredients

  • 7-8 Apples
  • 2 Tsp. Cinnamon
  • 3 Tbsp. Sugar
  • 1 Stick Unsalted Butter at room temperature
  • 1 C. Sugar
  • 1 Egg
  • 2 Tsp. Vanilla
  • 1 1/2 C. All-Purpose Gluten-Free Flour
  • 1/2 Tsp. Xanthan Gum
  • 1/4 C. Gluten Free Oats double this amount if you really like oats

Instructions

  • Peel, core, and slice about 8 apples very thinly.
  • Toss them in cinnamon and sugar.
  • Preheat oven to 350* degrees F.
  • Coat your pie pan with butter.
  • Place all of the sliced apples in the pie pan.
  • To make the crust, blend together the butter, sugar, egg, and vanilla.
  • Add the flour, xanthan gum, and oats.
  • Beat until you have a dough-type consistency.
  • Add nuts to your pie if you wish to include them.
  • Cover the apples with the dough topping, spreading with wet or floured hands for best results.
  • Cover the pie plate with aluminum foil, and bake for about 40 to 45 minutes.
  • Remove the foil and bake for another 20 minutes, or until the topping is golden brown.
  • Cool before serving.
  • Serve with ice cream for best results! Enjoy!
