Gluten Free Pancakes

These pancakes are so fluffy and delicious, you'll never believe they're gluten free!


  • 1 C. Gluten Free All-Purpose Flour
  • 1 Tbsp. Flax Meal
  • 2 Tsp. Baking Powder
  • 3 Tsp. Cinnamon
  • 1/2 Tsp. Salt
  • 2 Tbsp. Honey
  • 1 Tsp. Vanilla
  • 1/4 C. Unsweetened Applesauce
  • 1 C. LACTAID® Milk
  • Blackberries or other fruit for “syrup”


  • Mix together flour, flax, baking powder, cinnamon, and salt.
  • In a separate bowl, combine honey, vanilla, applesauce, and LACTAID® Milk.
  • Mix the liquid and dry ingredients together, slowly, until all lumps are gone.
  • Pour pancake batter onto hot, greased griddle.
  • Cook about 2 minutes each side.
  • Serve with fruit, maple syrup, honey, or a cinnamon/sugar/butter mixture. Enjoy!
