Buffalo Quinoa Fritters

These fritters are kid friendly and completely delicious! Serve with your favorite dipping sauce, or add the fritters to a tossed salad! Servings 4: Each serving = 3 Points

Ingredients

  • 1/2 C. Quinoa Rinsed
  • 1 C. Water
  • 1 C. Cooked Chickpeas Garbanzo Beans
  • 1/4 C. Hot Sauce or To Taste
  • 1/2 C. Cheddar shredded low fat or fat free
  • 1 Egg
  • 1/2 C. Panko Breadcrumbs
  • Salt and Pepper to taste
  • Oil for Frying

Instructions

  • Mix together 1 cup water and 1/2 cup quinoa in a small saucepan.
  • Bring to boil and simmer until the liquid is absorbed and the quinoa is tender.
  • Pour into mixing bowl and let cool.
  • While quinoa is cooking, cook chickpeas in their juice in another saucepan.
  • Smash the chickpeas with a spoon.
  • Mix cooked quinoa, chickpeas, hot sauce, cheddar cheese, egg, breadcrumbs, salt and pepper, in a large mixing bowl. Add more breadcrumbs as needed, until you can pick the mixture up.
  • Form quinoa/chickpeas mixture into small patties.
  • Add patties to air fryer basket; Fry @ 350 for 3-4 minutes on each side or until crispy
