Heat 1 Tbsp. oil in a large enough saucepan for all of the mushrooms and garlic.
Saute the mushrooms and garlic over medium heat for about 10 minutes.
In a bowl, combine oats, Parmesan, breadcrumbs, eggs, salt, onion powder, and cayenne together.
Mix in mushrooms and garlic.
Allow mixture to sit for about 5 minutes, or until it’s cool enough to touch so you can shape it into patties.
Fry patties, cooking about 5 minutes on each side.
