Chicken and Pasta Sheet Pan Meal

This chicken and pasta sheet pan meal is so easy to prepare, and so tasty!

Ingredients

  • 4 Boneless Skinless Chicken Breasts cut into 1 inch cubes
  • 1 28 Ounce Can Diced Tomatoes
  • 1/2 Tsp. Garlic Powder
  • Salt and Pepper
  • Cayenne Pepper
  • 3 Tbsp. Olive Oil
  • 1 14-19 Ounce Can Chickpeas drained
  • 1 Lb. Pasta of Choice cooked and mixed with 1 Jar Marinara Sauce
  • Parmesan Cheese and Green Onions for Garnish Optional

Instructions

  • Preheat oven to 400* degrees F.
  • Place tomatoes and their juice on prepared pan (foil and cooking spray).
  • Add garlic, salt, pepper, cayenne pepper, and 2 tablespoons oil to pan.
  • Bake for 10 minutes.
  • Remove pan from oven.
  • Add chicken, chickpeas, and 1 tablespoon oil.
  • Add more cayenne pepper if desired.
  • Roast for about 15 minutes, or until chicken is cooked thoroughly.
  • Season to taste.
  • Serve with cooked pasta and marinara sauce.
  • Garnish with green onions and/or Parmesan.
  • Enjoy!
