6 Servings: 6 SmartPoints (FREESTYLE)
Directions:
Preheat oven to 350*. Spray casserole dish with non-stick cooking spray.
Line the bottom of a casserole dish with half of the chips.
Saute the delicious veggies, beans, and chicken with the taco powder and water, making a sauce.
Stir together cooked veggie mixture with salsa.
Spread 1/2 of the mixture over your tortilla chips… mmmmm.
Repeat this process, so you'll have two identical layers.
Add sour cream, top with cheese, and garnish with cilantro (optional – cilantro is disgusting to me but the family loves it).
Bake at 350* F for about 20 minutes.

This chicken taco casserole is too rich and delicious to be so healthy!
- 2 C. Cooked Chicken or Chicken Substitute (like Gardein)
- 1/2 Onion
- 1/2 Bell Pepper
- 1 Packet Taco Seasoning + 1/4 C. Water
- 1 C. Low-Fat Tortilla Chips, crushed and divided
- 1 C. Nonfat Sour Cream
- 1 C. Shredded Monterey Jack
- 1 C. Salsa
- 1/2 Can Black Beans

When and where do you put in the other 1/2 of the chips? I just sprinkled them on top. Maybe I missed in in the recipe. ;) Still, looks and smells great!

How much is a serving ?
This is an easy-to-make casserole, which is also delicious. Please add to the instructions when to add the 1/2 can black beans, when to put on the other half of the tortilla chips and what size casserole you suggest. Thanks.

Cilantro is an acquired taste. When I first moved to Southern California 30 years ago I couldn’t stand the smell of cilantro. But over the years and being exposed to Mexican food many different ways I have come to love it.
My family loved this. Said it was definitely a keeper. I made some modifications to this though. I made it in a 9″ x 13″ casserole as I wasn’t sure what size to use based on the recipe. I cooked 1 lb. of chicken in olive oil first. Then increased the onion to a whole onion and bell pepper (which I increased to 2 whole red peppers diced) that I sauteed with the chicken. I used 2 cups tortilla chips and a 1 lb container of sour cream with 2 cups Mexican blend cheese, 16 oz jar of salsa and 1 full can black beans. . .so basically I doubled the recipe, except I quadrupled the red peppers. It turned out great. Not sure what the olive oil does however to WW points as I don’t do WW.
