Weight Watchers - Friendly Tomato Tofu Bisque

This is a wonderful weight watchers – friendly vegetarian soup and it tastes yummy!!
Makes 4 servings – feel free to double it if you want to serve more or have plenty for left overs!!!

Yields: 4 servings



  1. Heat the oil in a saucepan
  2. Add the onions and cook til they break down, about 3 minutes
  3. Add the flour and stir until brown, 1-2 minutes
  4. Add in tomatoes, veggie broth, oregano and pepper and bring it all to a boil
  5. Reduce the heat and simmer covered for 10 minutes
  6. Separately, puree the tofu with the tofu juice you saved earlier
  7. Mix the puree'd tofu mixture into the tomato mixture and add in parley, dill and honey
  8. Stir until heated
