This is a wonderful weight watchers – friendly vegetarian soup and it tastes yummy!!
Makes 4 servings – feel free to double it if you want to serve more or have plenty for left overs!!!
5 Points Per Serving
Yields: 4 servings
1 Tbsp olive oil
1 chopped onion
1 Tbsp all purpose flour
1 Tbsp minced dill
1 Tbsp honey
30 oz can diced tomatoes (no salt added) Walmart has a great no salt added tomato I use religiously!!
2 cups low sodium vegetable broth
1 Tsp dried oregano
1/4 Tsp ground pepper
1/2 pound reduced fat soft tofu (reserve at least 1/2 cup of the juice as you will use it in your puree later)
1/4 cup minced parsley
Heat the oil in a saucepan
Add the onions and cook til they break down, about 3 minutes
Add the flour and stir until brown, 1-2 minutes
Add in tomatoes, veggie broth, oregano and pepper and bring it all to a boil
Reduce the heat and simmer covered for 10 minutes
Separately, puree the tofu with the tofu juice you saved earlier
Mix the puree'd tofu mixture into the tomato mixture and add in parley, dill and honey
