For the longest time I refused to even try Tofu. I had several vegetarian friends and they were always ordering it and I would simply turn up my nose and say, “eew.” To myself only of course!

Flash forward 20 years, and I am looking for ways to eat lighter, healthier and lose some very unwanted pounds. I started using the Weight Watchers program (yes I am a dedicated member) and not only has it introduced me to many new foods, it has also really shown me the way to eating the right amount of food, each day. If you are even considering joining, I would really urge you to do so. I would also tell you to start today. I waited far too long to get going myself. Once I did, I felt I had really found the way. Turns out, I have a very analytical mind. I like to count things, so adding up the points of the food I was eating was very beneficial (and actually fun) for me. I also eat in restaurants a lot, so knowing the points of things was “essential” to me for ordering right and staying on track. At first, I thought I could do it with just the app, without meetings, and so I tried. But there is something about the accountability of attending meetings that I needed. You may not, of course, but I did. Knowing I had a weigh in coming up on Thursday just always seemed to be the good fairy on my shoulder telling me to do what's right!¬† That may sound silly to some, but I swear it helps me.

Anyway, I digress back to my tofu story and it's purpose, my delicious Tomato-Tofu Bisque recipe. Using WW has helped me broaden my horizons and try new things. Turns out I LOVE tofu and I put it in just about everything. I am not a vegetarian, I just love the stuff. I play with all kinds of recipes and tweak them to make them taste better and better. Here is a wonderful Weight Watcher's-Friendly Tomato-Tofu Bisque recipe that is just 5 Points per serving.

You can also make this in your instant pot very easily. Put everything into the instant pot, minus the oil, and cook on Soup/Stew for 15 minutes. Allow it to natural release and when it's done, simply mix it up!!

Weight Watchers Friendly Tomato-Tofu Bisque

Weight Watchers - Friendly Tomato Tofu Bisque

This is a wonderful weight watchers – friendly vegetarian soup and it tastes yummy!!
Makes 4 servings – feel free to double it if you want to serve more or have plenty for left overs!!!
5 Points Per Serving

Yields: 4 servings

  • 1 Tbsp olive oil
  • 1 chopped onion
  • 1 Tbsp all purpose flour
  • 1 Tbsp minced dill
  • 1 Tbsp honey
  • 30 oz can diced tomatoes (no salt added) Walmart has a great no salt added tomato I use religiously!!
  • 2 cups low sodium vegetable broth
  • 1 Tsp dried oregano
  • 1/4 Tsp ground pepper
  • 1/2 pound reduced fat soft tofu (reserve at least 1/2 cup of the juice as you will use it in your puree later)
  • 1/4 cup minced parsley
  1. Heat the oil in a saucepan
  2. Add the onions and cook til they break down, about 3 minutes
  3. Add the flour and stir until brown, 1-2 minutes
  4. Add in tomatoes, veggie broth, oregano and pepper and bring it all to a boil
  5. Reduce the heat and simmer covered for 10 minutes
  6. Separately, puree the tofu with the tofu juice you saved earlier
  7. Mix the puree'd tofu mixture into the tomato mixture and add in parley, dill and honey
  8. Stir until heated
  • Preparation time: 15 minutes
  • Cook time: 15 minutes
  • Total time: 30 minutes
