Weight Watchers – Friendly Tomato-Tofu Bisque
WW Friendly Vegetarian Tomato-Tofu Bisque ONLY 5 Points!!

For the longest time I refused to even try Tofu. I had several vegetarian friends and they were always ordering it and I would simply turn up my nose and say, “eew.” To myself only of course!
Flash forward 20 years, and I am looking for ways to eat lighter, healthier and lose some very unwanted pounds. I started using the Weight Watchers program (yes I am a dedicated member) and not only has it introduced me to many new foods, it has also really shown me the way to eating the right amount of food, each day. If you are even considering joining, I would really urge you to do so. I would also tell you to start today. I waited far too long to get going myself. Once I did, I felt I had really found the way. Turns out, I have a very analytical mind. I like to count things, so adding up the points of the food I was eating was very beneficial (and actually fun) for me. I also eat in restaurants a lot, so knowing the points of things was “essential” to me for ordering right and staying on track. At first, I thought I could do it with just the app, without meetings, and so I tried. But there is something about the accountability of attending meetings that I needed. You may not, of course, but I did. Knowing I had a weigh in coming up on Thursday just always seemed to be the good fairy on my shoulder telling me to do what's right! That may sound silly to some, but I swear it helps me.
Anyway, I digress back to my tofu story and it's purpose, my delicious Tomato-Tofu Bisque recipe. Using WW has helped me broaden my horizons and try new things. Turns out I LOVE tofu and I put it in just about everything. I am not a vegetarian, I just love the stuff. I play with all kinds of recipes and tweak them to make them taste better and better. Here is a wonderful Weight Watcher's-Friendly Tomato-Tofu Bisque recipe that is just 5 Points per serving.
You can also make this in your instant pot very easily. Put everything into the instant pot, minus the oil, and cook on Soup/Stew for 15 minutes. Allow it to natural release and when it's done, simply mix it up!!
