Weight Watchers Friendly Breakfast Casserole – 1 SP Freestyle

Have you started the Weight Watchers Freestyle program yet? If so, I hope you're loving it as much as I am! One of my favorite things about freestyle is that eggs are ZERO points now. Because I love them, I have been getting very creative lately with my egg recipes. Hence, my Weight Watchers Breakfast Casserole.

I love this program so much, because there's no “you can't eat that”… you can eat whatever you want, within moderation, as long as you track it! If you're struggling to stay within your daily points, be sure to check out the Zero Point food list.

Here are my FAVORITE casserole dishes, great for any casserole, dishwasher safe, and easy to clean!!

Weight Watchers Breakfast Casserole

Ingredients for Weight Watchers Breakfast Casserole

6 eggs
1/4 cup fat free shredded cheddar
4 turkey sausages, chopped up
1/2 red onion
1/4 cup cherry tomatoes, sliced in half
1/4 cup mushrooms
1/2 bell pepper
pepper
garlic salt
oregano
red pepper flakes

It is only 1 SmartPoint (Freestyle) for 1/4 of the casserole!

Crack 6 eggs into a bowl and stir (like you're making scrambled eggs).

Add all other ingredients and mix together.

Transfer to a casserole dish.

Bake at 350* for about 35 minutes or until eggs are cooked through.

    1. When. Enter my Turkey sausage it is 2 points for 2 patties. So it has 4 patties so that would make it 1 point per serving

  1. After requesting to download your cookbook and adding my email address I received so much spam. To top it off I was not able to download the cookbook 🙁

    1. Barb, the first email shows you how to download the ebook (it’s a simple click and password). There is no spam – ever – each email is personally typed by me and sent out based on what you signed up for (weight watchers, for example). If you have questions you can always email me (by hitting “REPLY” to one of the emails), but no… I have never spammed… I type personal emails to you guys, that’s it.

  3. I’ve added this exact recipe into WW Recipe Builder and I keep getting 8 points for the total thing, which equals 2 points per serving – how are you getting 1 point per serving?

    1. You can use 1 cup sausage crumbles, or 4 links Jimmy Dean turkey sausage, and they’re 4 points. The cheese is 1 point (you could use mozzarella for 0 points). The rest of the recipe is 0 points.

      1. Someone’s calculations are wrong, because it says 5 points for 1 cup Jimmy dean Fully cooked turkey sausage crumbles, and 5 points for Jimmy Dean Fully cooked sausage links, per the WW recipe builder.

      2. Hi all…I just made and ate 1 serving for lunch with a side of cantaloupe. It is delicious!
        FYI…My Jimmy Dean fully cooked turkey sausage links came up 3 points! Hurray! Thanks for this great recipe!

  4. When I put this in the WW recipe builder this comes up as 6 points!! I am not sure your calculations are correct.

    1. Darcy, eggs are 0 points. 1/4 cup FF shredded cheese is 0 points. The rest of the ingredients are 0 points. The only thing with points is the turkey sausage, which is 4 points for the WHOLE recipe. Divide it by 4 and its 1 point per serving.

  5. I don’t understand why people have to recalculate the freestyle points. Why don’t they just take your word for it.

  6. I think that the confusion lies in the brand of turkey sausage that is being used. Apparently not all turkey sausages are built the same? IDK. I’m definitely making this recipe! I make a egg scramble every morning with most of these ingredients and a casserole sounds so much easier and less time consuming. Thank you for sharing!
    Also, I just saw that if you use Butterball Natural Inspirations Turkey breakfast links that its the same amount of links for 2 points (1 less than Jimmy Dean).

  9. Yes! I made two and cooked them the next morning. They were delicious. Even people not watching their weight loved them and asked for the recipe. Keep em coming!
