Mix cream cheese, ricotta cheese, 1/2 cup mozzarella cheese and thawed spinach in a bowl until evenly blended.
Roll out dough, cut into 10 equal rectangles.
Tie each of them in a loose knot.
Place knots around the edges of an oiled skillet, leaving the middle open.
Spoon in your cheese/spinach mixture to fill the empty space.
Sprinkle with leftover mozzarella and parmesan cheese, and a little bit of fresh parsley.
Bake at 350 for 15 minutes.
