Lo Mein is one of our favorite vegetarian dinners, so trying Instant Pot Lo Mein was something we were excited to try! If you have not started the new Weight Watchers Freestyle program yet, now is the time! They've added over 200 zero point foods, including lean chicken and turkey (which you can easily add to this recipe without adding points).
Instant Pot Lo Mein
If you have an Instant Pot but haven't taken it out of the box yet, this dish is a great one to start with. It's simple, and you can switch some of the spices up a bit if you want, without messing anything up.
Serves 6; 6 Weight Watchers Freestyle Points each serving
Saute sesame oil, garlic, and red onion until tender.
Add rice wine vinegar, vegetable stock, lemon juice, soy sauce, and brown sugar and mix until blended well.
Add uncooked lo mein/rice noodles.
Add carrots, mushrooms, and snow peas.
Lock lid and set vent to sealing.
Press manual button and set to high for 5 minutes.
Quick pressure release carefully.
Serve and Enjoy!

- 2 cups sliced mushrooms
- 1 cup julienned carrots
- 1 cup snow peas
- 2 tablespoons rice wine vinegar
- 1 ½ cup vegetable stock
- Juice of 1 lemon
- 3 tablespoons soy sauce
- ⅓ cup brown sugar
- 8 oz lo mein/rice noodles
- Salt & Pepper to taste
