We love black bean burgers, made several different ways. They make their way to our vegetarian meal plan many times each month!
Throw Together Black Bean Burgers
These are called “throw together” black bean burgers because if you don’t have the stuff on the list, you can pretty much add whatever. Don’t have peas? Add corn! Don’t have enough oats? Add some bread crumbs! Don’t have beans? Well, um.. go get some beans and come back. ;)
Ingredients:
3 cups black beans (canned are fine)
1 1/2 cups oats (pulsed in a food processor a few times)
1 cup peas (or corn, or whatever – frozen is fine)
2 tablespoons olive oil
1/2 cup onions, diced
2 cloves garlic
seasonings (we used cayenne pepper and salt)
Directions:
Combine olive oil, onions, and other seasonings in a pan and saute until onions are soft. Add in black beans and heat just for a few minutes, until all ingredients have been warmed up.
In a bowl, combine the oats, peas, and everything you heated up. You might need to add some more oats to get it to a less mushy consistency. Feel free to add 1/2 cup breadcrumbs instead of adding more oats. It’s really all about what you prefer… either will work perfectly.
Bake at 350* for 30 minutes (turning over after 15), and serve warm just like you would hamburgers.
Top with tomatoes, lettuce, ketchup, whatever… :)
