BBQ Chicken Mac & Cheese Grilled Cheese

As you all know, our life has been beyond crazy these past few months. The remodel is taking a bit longer than expected, but is coming along beautifully! I'll have a post up about that within the next week or so. This week has been spent moving in to our new house. The movers never showed up, so we wasted a day and then had to rent a truck to move everything ourselves.

Rachel has been working around the clock, both at work and on the house. So again, things are really crazy. One thing I've tried to keep consistent is good food. I don't mean meh food. I'm talking comfort food that she can come home to, the down home cooking we were used to back in the Midwest. Tonight, I made grilled cheese. Not just ANY grilled cheese, a freakin' BBQ Chicken Mac and Cheese Grilled Cheese.

BBQ Chicken Mac & Cheese Grilled Cheese

This bread is legit, ya'll. It held up to like a pound of cheese, plus mac and cheese, plus BBQ chicken. I've never seen a bread do that. Ever.

We don't eat a whole lot of bread in this house, but when we do, it's a debate over which bread to buy. Should we buy white, should we buy wheat, should we buy something with seeds and nuts and crazy stuff nobody wants to eat? Sara Lee® Artesano™-style bread will win the debate hands down, every time. This hearty Italian bread holds strong under the weight of tons of cheese, and crisps nicely when grilling.

Sara Lee® Artesano™-style bread is Sara Lee's newest addition. It's sliced thick with a soft texture, complemented by its golden crust. It would be killer to use in French Toast! You'll find it for about $2.99, which is just the right price for bakery-style bread. It'll be on Rollback at Walmart until 7/13/16.

BBQ Chicken Mac and Cheese Grilled Cheese

I don't know if you can call this a recipe, because I didn't do much cooking other than melting all the ingredients together. However, you can go all Suzy Homemaker and make everything from scratch if you'd like… so let's talk ingredients.

Bread – You know to use Sara Lee® Artesano™-style bread, right? Right. Be sure to use butter instead of just using pan spray. Butter makes everything better.

Next…

BBQ Chicken – You can make your own by throwing a few chicken breasts, along with a can of chicken broth, into your pressure cooker and setting the timer for about 20 minutes (if you have a “poultry setting”, use that). You could use a slow cooker if you have more time and just want to set it and forget it.

Mac & Cheese – You've got your own special recipe, I'm sure… so use it! I used pre-made mac and cheese but only because I literally can't find a pot to boil water in right now.

Extra Cheese – I used shredded cheddar cheese, but there are so many options for cheese… get creative! I like sharp cheddar with BBQ sauce, but white cheddar would be delicious, too.

Just like you'd make a regular grilled cheese, butter the skillet and the bread. Heat on medium low so the cheese has time to melt slowly without burning the bread.

Add a few tablespoons of macaroni and cheese, top with shredded cheese. Add more BBQ chicken, top with more cheese. Grill until all ingredients are melted.

Serve with… oh wait, this is a meal in itself. Nevermind. Enjoy!!

This savory and cheesy sandwich will blow your mind with flavor!

  • 2 Slices Bread per Sandwich – Sara Lee® Artesano™-style bread or bread of choice.
  • BBQ Chicken
  • Mac & Cheese
  • Extra Cheese of your choice

Butter the skillet and the bread.

Heat on medium low so the cheese has time to melt slowly without burning the bread.

  1. We bought this bread recently for “fancy sandwiches” and we all loved it. My son doesn’t want regular bread after eating this one.

  2. This looks soo good. Mac & cheese, bbq, and grilled cheese…..total triple threat. I’m gluten intolerant but gulten be damned! It can’t take away everything in life I love. lol

    I’m glad your move and remodel and everything are going well, even if taking longer than expected. Can’t wait to see your post about the place!

  3. This looks delicious! I am a sucker for cheese and I love me a good BBQ sandwich, what a great combo. Oh and lets not mention bread, I will eat the whole loaf if it is a great quality bread, which I am pretty sure Sara Lee is at the top of my yum list!

  4. That looks like something hubby and I would love. I think this one is really worth a try! I love what I call the hearty breads…not much of sliced white bread in a wrapper girl. I’m into the “fancy” breads!

  5. My kid loves this bread for his school lunch. It doesn’t get all nasty in the lunch bag like other breads. Also, yuum on the grilled cheese.

  6. This looks really delicious. I didn’t even know Sara Lee made this bread, but I’ll look for it the next time I go grocery shopping!

  7. We love this bread because it is dairy free and corn ingrediant free so I don’t have to make bread now unless I want to!! It tastes great and makes great french toast as well!!

  8. Looks yummy, I will look for that bread, I always loved their cakes, my grandmothers fav was their pound cake, always had some in the freezer
