BBQ Chicken Mac & Cheese Grilled Cheese

As you all know, our life has been beyond crazy these past few months. The remodel is taking a bit longer than expected, but is coming along beautifully! I'll have a post up about that within the next week or so. This week has been spent moving in to our new house. The movers never showed up, so we wasted a day and then had to rent a truck to move everything ourselves.
Rachel has been working around the clock, both at work and on the house. So again, things are really crazy. One thing I've tried to keep consistent is good food. I don't mean meh food. I'm talking comfort food that she can come home to, the down home cooking we were used to back in the Midwest. Tonight, I made grilled cheese. Not just ANY grilled cheese, a freakin' BBQ Chicken Mac and Cheese Grilled Cheese.
This bread is legit, ya'll. It held up to like a pound of cheese, plus mac and cheese, plus BBQ chicken. I've never seen a bread do that. Ever.
We don't eat a whole lot of bread in this house, but when we do, it's a debate over which bread to buy. Should we buy white, should we buy wheat, should we buy something with seeds and nuts and crazy stuff nobody wants to eat? Sara Lee® Artesano™-style bread will win the debate hands down, every time. BBQ Chicken Mac and Cheese Grilled Cheese
I don't know if you can call this a recipe, because I didn't do much cooking other than melting all the ingredients together. However, you can go all Suzy Homemaker and make everything from scratch if you'd like… so let's talk ingredients.
Bread – You know to use Sara Lee® Artesano™-style bread, right? Right. Be sure to use butter instead of just using pan spray. Butter makes everything better.
BBQ Chicken – You can make your own by throwing a few chicken breasts, along with a can of chicken broth, into your pressure cooker and setting the timer for about 20 minutes (if you have a “poultry setting”, use that). You could use a slow cooker if you have more time and just want to set it and forget it.
Mac & Cheese – You've got your own special recipe, I'm sure… so use it! I used pre-made mac and cheese but only because I literally can't find a pot to boil water in right now.
Extra Cheese – I used shredded cheddar cheese, but there are so many options for cheese… get creative! I like sharp cheddar with BBQ sauce, but white cheddar would be delicious, too.
Just like you'd make a regular grilled cheese, butter the skillet and the bread. Heat on medium low so the cheese has time to melt slowly without burning the bread.
Add a few tablespoons of macaroni and cheese, top with shredded cheese. Add more BBQ chicken, top with more cheese. Grill until all ingredients are melted.
Serve with… oh wait, this is a meal in itself. Nevermind. Enjoy!!
