Vegetarian Weight Watchers Pot Pie

Ingredients

2 cups frozen mixed vegetables
can of cream of mushroom soup
can of cream of potato soup
1/4 white onion, chopped
1 can biscuit dough

Makes 6 servings; 8PP, 11SP

This recipe is great for a party, potluck, or just for any weeknight dinner! Whether your friends and family are doing Weight Watchers or not, they'll love this dish!

In a skillet, saute frozen mixed veggies and chopped onion until tender. I usually use the bag that has asparagus in it, but I couldn't find it this time. Pour into a casserole dish, along with your soups. Mix thoroughly.

Delicious Weight Watchers friendly pot pie recipe.

  • 2 cups frozen mixed vegetables
  • 2 white potatoes, diced
  • can of cream of mushroom soup
  • can of cream of potato soup
  • 1/4 white onion, chopped
  • 1/4 cup flour
  • 1 tsp Veggie stock concentrate
  • 1 can biscuit dough
  1. Peel and boil potatoes for 5 minutes
  2. In a skillet, saute all vegetables, potatoes and onion until tender
  3. Pour into a casserole dish, along with your soups and flour (plus stock if wanted). Mix thoroughly
  4. Break apart biscuit into pieces, cover all over your veggies.
  5. Bake at 350 for 20 minutes.
