Simple Udon Noodle Stir Fry Recipe
This is one of the simplest recipes ever, because you can buy already cooked udon noodles at Whole Foods (or any food store with a large selection of Asian or International foods). The great thing about this recipe is that you can make it your own by spicing it up, or down… or adding squash or any other veggies you may like.
Ingredients:
Japanese Udon Noodles
broccoli
mushrooms
carrots
other vegetables (optional)
4 tablespoons teriyaki sauce
1 tablespoon soy sauce
2 teaspoons brown sugar
3 cloves garlic, chopped/diced
chili flakes, red pepper flakes, or something else for “heat”
Directions:
Spray wok (or non-stick skillet) with cooking spray. Add garlic, broccoli, mushrooms, and carrots. If needed, add some water. Cook for 4-5 minutes or until all veggies start to get to the consistency you like (I like mine crunchy).
Add udon noodles. Combine teriyaki and soy sauce, brown sugar, and pepper flakes, and add to noodle and vegetable mixture.
Cook until udon noodles are heated through, serve immediately.
