Instant Pot Salted Caramel Cheesecake
I was looking for Instant Pot cheesecake recipes and what I found was that making cheesecake in the Instant Pot isn’t any easier than making it the normal way. So I guess if you’re just curious, or on an Instant Pot kick, or maybe you’re living in an RV and don’t want your oven to heat the whole thing up, this is a great option.

There are many ways you could make this crust, but I used Ritz crackers and butter. Because… butter, yeah? Be sure to grab your 7″ springform pan NOW because they keep selling out! I ended up using a 6 2/3″ pan.
I realized two things while making this cheesecake. #1, my Instant Pot needs to be cleaned. #2, I hate making cheesecake. Rachel said it was the best cheesecake she had ever had, which made it totally worth it. I think her cheesecake is the best, so I was grinning ear to ear when she gave me such a compliment. I didn’t use a foil sling because I used the trivet with the handles up. It was super easy to grab the cheesecake using those handles, I just used paper towels as an “oven mitt” so I didn’t burn my hands. Making a foil sling is fun, I’m sure, but I’m lazy.
This is literally the best cheesecake I’ve ever made, and it’s the prettiest. By far.
I used the little caramel balls from the baking aisle, melted them on the stove with some whipping cream. Topped with salt. Honestly, you could use caramel sauce like the kind for ice cream topping… or make your own. Either way it’ll be freakin’ delicious!
