Grandma’s Sweet Potato Casserole Recipe
I never really liked sweet potatoes, but my Grandma used to make this casserole and we would eat it every Fall. She passed away a while ago but I still remember how happy she was to serve us her homemade dishes like this one.
Sweet Potato Casserole Ingredients
1 – 40 ounce can cut yams, drained
1/2 cup brown sugar
1/4 teaspoon salt
1/2 teaspoon cinnamon
1 egg, beaten
4 tablespoons melted butter
1 – 16 ounce bag marshmallows*
Sweet Potato Casserole Directions
Heat oven to 350*F, then butter your one-quart baking dish.
Mash the yams in a large bowl. Add brown sugar, salt, cinnamon, egg, and melted butter. Mix well, then place 1/2 of the mixture in the baking dish.
Chop marshmallows into 1/4ths.
Top with a layer of marshmallows (reserve some for later), then add the other 1/2 of the mixture. Bake for 30 minutes.
Remove from oven and top with reserved marshmallows. Bake for about 10 minutes or until marshmallows are lightly browned.
Scoop out into parfait dishes and serve!
